Lactarius deliciosus (L.) Gray

SAFFRON MILKCAP

Fruit body: cap up to 15 cm, rounded, then expanded and depressed in centre, concentrically zoned in shades of orange, ochraceus and red-brown, turning green when bruised, margin stays involute for long. Gills are decurrent, orange, turning green when bruised. Stem is up to 7x2.5 cm, colour as cap or brighter, ornamented with shallow, orange pits.

Microscopy: spores ellipsoid, ornamented with network of ridges, 7—9x5.5—7 μm, cream en masse.

Flesh: thick, bright orange, fruity smell, sharp taste reminiscent of carrot. Milk is orange, unchanging, sweetish.

Habitat: season summer to autumn, under pines (Pinus). Common.

Edibility: edible, priced.
